■Our curding machine was installed in a mass-production line of “Shima Tofu”, a traditional food in Okinawa.
In this production line, the buckets have top covers to prevent contamination.
“Shima Tofu” is harder than general firm tofu and rich in nutrients. It contains 1.3 times as much protein as the general firm tofu.
Coagulant is constantly added to soymilk suitable for hard tofu, and then the soymilk is stirred for curding.
